Harvey Wallbanger
Cake
Ingredients
1 18 1/2 oz orange or yellow cake mix (I used yellow)
1 3.4 oz instant vanilla pudding mix
1/2 tsp baking powder (optional)
4 eggs
1/2 tsp orange extract
1/2 cup oil
1/2 cup orange juice
1/2 cup Galliano
2 tbsp Vodka
Zest of one orange
Glaze
1 cup confectioners' sugar
1/4 tsp orange extract
1 tbsp orange juice
1 tbsp Galliano
1 tsp Vodka
Directions
1. Preheat oven to 350 degrees. Grease and lightly flour a Bundt pan.
2. Combine all the ingredients in a large mixing bowl. Mix on low for 30 seconds to combine. 3. Beat on medium for 2 minutes. Mix in the orange zest. (I didn't do this and the zest gets all trapped in the beaters, so next time I'll know better.)
4. Pour the batter into the prepared pan.
5. Bake for 35-40 minutes until browned and a cake tester comes out clean. Cool on a rack for 20 minutes. Remove from the pan and cool for at least 1.5 hours before you make the glaze.
6. To make the glaze, combine the glaze ingredients in a small bowl. Mix until smooth and a bit thick but thin enough to run down the sides.
7. You're ready to eat!
